Pancooks!

Who doesn't love PANCAKES? I have memories of my mom, making pancake batter from scratch and then pouring me out designs in yummy pancake form. The easiest is the mouse head, but she would even try my most crazy requests, including elephants and cars. Forget the mix, try this simple homemade recipe and all will be well.

1 cup flour
1 Tbs baking powder
1/2 tsp baking soda
1/2 tsp salt

3 Tbs sugar

2 Tbs vegetable oil

1 cup milk

1 egg

Mix all ingredients together in a large bowl with a wire whisk. Pour 1/4 cup ladles full of batter onto a hot, greased skillet. Cook on on side until small bubbles begin to form and pop. Using a spatula, flip over and cook on other side until brown. Serve hot with syrup and other such toppings.
